Greek Salad

Greek Salad

Base of salad was Napa cabbage (because it holds up well and can be done ahead of time)

Kalamata olives

Roasted red peppers or raw red peppers

Protein of choice: salami, smoked game, hard boiled egg

Artichoke hearts

Handful halved cherry tomatoes

Feta cheese (optional)

 

Dressing – Simply shake up in a mason jar to combine

¼ cup Spirits & Spice Sweet Arbequina Extra Virgin Olive Oil

1 Tbsp Spirits & Spice Vinagre Viejo de Montillo (or red wine vinegar)

1-2 tsp Spirits & Spice My Big Fat Greek Seasoning (formerly Greek Goes on Everything)

1 Tbsp Greek yogurt (optional) for consistency, visuals (so that you can "see" the dressing)

Salt and pepper to taste

               

If you’re making this salad ahead of time use cabbage or kale to start.  Feel free to add spinach before serving for even more of a nutritional punch.
