Greek Salad

Base of salad was Napa cabbage (because it holds up well and can be done ahead of time)

Kalamata olives

Roasted red peppers or raw red peppers

Protein of choice: salami, smoked game, hard boiled egg

Artichoke hearts

*Handful halved cherry tomatoes

Feta cheese (optional)


Dressing – Simply shakeup in a mason jar to combine

¼ cup Spirits & Spice Italian Carolea Extra Virgin Olive Oil

1 Tbsp Spirits & Spice Aceto Balsamico Oro (or red wine vinegar)

1 - 2 tsp Spirits & Spice My Big Fat Greek Seasoning 

1 Tbsp Greek yogurt (optional) for consistency, visuals (so that you can "see" the dressing)

Salt and pepper to taste

*For low-carb-keto, omit the tomatoes.     

*For Clean Eating use non-factory farmed / organic and / or heritage breed pork for best results.        

If you’re making this salad ahead of time use cabbage or kale to start.  Feel free to add spinach before serving for even more of a nutritional punch.
