Green Bean Salad with Caramelized Onion Dressing

You will need: 

1 lb green beans, trimmed

1 fennel bulb, tops trimmed and shaved into very thin slices

1 head of radicchio, sliced lengthwise and core removed

3 Tbsp. Spirits & Spice Roasted Garlic Extra Virgin Olive Oil

2 Tbsp. Spirits & Spice Caramelized Onion Balsamic

½ tsp. prepared mustard

Spirits & Spice Garlic Pepper to taste

Kosher Salt

1/3 cup Spirits & Spice Roasted Garlic EVOO Crumbles

 

Fill a large pot with boiling salted water and bring to a boil.  Add the green beans and boil until just tender and dark green (about 8 minutes).  Remove from boiling water and immediately put in an ice bath to cool. Drain and allow to dry.  Transfer to a large bowl. 

In a large bowl, combine the green beans, shaved fennel and radicchio.  In a small bowl combine the Roasted Garlic EVOO, Caramelized Onion Balsamic, prepared mustard and Garlic Pepper using a whisk or a stick blender.  Pour the Olive Oil mixture on the vegetables and toss.  Season with kosher salt to taste and top with the Roasted Garlic Crumbles. 

Serves 6 to 8.
