Kim's ready to go Spirits & Spice Chicken Salad

Kim Weiss's Chicken salad recipe

I already eat pretty healthy -- but I have a few weaknesses that I fall back on when I'm in a hurry and mayonnaise or aioli is one of my weaknesses.  Here is a recipe for Chicken Salad, which could also be used for tuna salad -- just substitute canned tuna for the Chicken -- that avoids Mayo and other hydrogenated fats -- in fact all fats.

 You will need:

Fresh ginger, peeled about the size of the top part of your thumb

1 tsp S&S Asian Goes On Everything

1/4 medium yellow onion

3 Tbsp. S&S Honey Ginger Balsamic

1 cup of shredded chicken breast, skin off -- you can used canned chicken breast

3 ribs of diced celery

1 bunch of spring onions, diced to ends, discard the tips on both ends

1/4 cup of dried cranberries

Salt & Pepper to taste

Instructions

  1. In a food processor, combine the ginger, Asian Goes On Everything, the yellow onion and the Honey & Ginger Balsamic.
  2. Process until well mixed and set aside.
  3. In a medium sized bowl, combine the shredded chicken, celery, diced spring onions and cranberries.
  4. Then add in your Balsamic mixture from the food processor. Toss. Taste and add salt and pepper to your liking.
  5. Cover and set aside in the refrigerator for at least 30 minutes to allow flavors to meld.
  6. Serve over greens or with crackers for a quick lunch or snack.
