Italian Chickpea Salad

Italian Chickpea Salad

Two 16 ounce can of chickpeas, drained

1 medium cucumber, diced

1 green bell pepper, seeded and diced

½ white onion, diced

1 cup cherry tomatoes, diced

1 cup parsley, chopped fine

juice of 2 lemons, about 4 Tbs

2 Tbs Spirits & Spice Italian Herb Medley Extra Virgin Olive Oil

1 ½ tsp Spirits & Spice Easy Peasy Chicken Spice

2 Tbs goat feta cheese

Add all your ingredients to a large mixing bowl and stir until all ingredients are combined. Taste and adjust flavors as needed.  Easy peasy!
