Tajines are a traditional North African cooking vessel that was designed to keep as much moisture in the vessel as possible. They are very forgiving; you can’t really overcook something unless you really forget about it for a long period of time.
You will need:
1 baking chicken, whole
1 lemon
½ cup large green olives
2 Tbsp. Spirits & Spice Lemon Cucumber Balsamic
2 Tbsp. Spirits & Spice Dill Lemon Extra Virgin Olive Oil
1 Tbsp. Spirits & Spice Tzatziki spice
1 tsp. Spirits & Spice Garlic Pepper
Kosher Salt to taste
Preheat the oven to 350-degree Fahrenheit. Cut the lemon up into 1/8th. Place one 1/8th of a lemon into the cavity of the chicken. Combine the Balsamic, Oil and spices in a small bowl. Brush the chicken with the oil/vinegar/spice blend and pour remainder into the dish. Add the lemon 1/8th s and the olives. Place the cover on the tajine and bake for 40 minutes. Then remove the cover of the tajine and bake for another 20 minutes. Serve over rice, noodles or couscous because the sauce it makes is yummy!
