4 -6 leaves of endive
½ cup chopped walnuts, toasted
1 cup green apple finely chopped
½ cup finely diced celery
¼ cup finely diced red onion
1/4 cup of Spirits & Spice Lemon EVOO Crumbles
For dressing:
¼ cup Spirits & Spice Apple Balsamic
1 tsp. prepared mustard
¼ tsp. Spirits & Spice Herbs de Provence
½ cup Spirits & Spice Lemon Extra Virgin Olive Oil
¼ tsp kosher salt
Blend all the dressing ingredients together using a blender, food processor or a stick blender. Combine the walnuts, apples, and celery and red onion in a bowl. Pour the dressing into the bowl and combine. Using the endive as a boat, fill the endive with the walnut/apple/celery mixture. Top with the Lemon Extra Virgin Olive Oil Crumbles.
