Roasted Beets & Goat Cheese Salad

4 medium sized beets

3 Tbsp. Spirits & Spice Don Carlos Extra Virgin Olive Oil

Kosher salt & Spirits & Spice Orange Pepper

2 Tbsp. Spirits & Spice Caramelized Onion Balsamic

2 cups of Spring Mix lettuce greens

2 Tbsp. soft goat cheese

2 Tbsp. Spirits & Spice Raspberry Balsamic

 

Preheat oven to 400 degrees F.  Brush unpeeled beets with 1 Tbsp. of the Don Carlos EVOO and season with kosher salt.  Bake in a baking dish until beets are tender, 1 to 2 hours.  Remove and let cool until they are cool enough to handle.  Peel the beets and slice as thinly as possible.  Toss the salad greens in a bowl with remaining Don Carlos EVOO and the Caramelized Onion Balsamic.  Arrange the beet slices on plates to serve.  Place the salad greens in the middle of the beet slices.  Crumble the goat cheese on top of each salad.  Drizzle with Raspberry Balsamic and season with kosher salt and Orange Pepper and serve.  Serves 4.
