Lemon Curry Chicken

This is a quick, tasty chicken dish brimming with flavor.

 

Prep time:  15 minutes.

Cooking time:  20-25 minutes 

4 medium Chicken breasts

Spirits & Spice Lemon Olive Oil

 COATING

1 tsp Spirits & Spice Garam Masala Goodness

½ tsp paprika

½ tsp sale

¼ tsp pepper

¼ c breadcrumbs

 

SAUCE

½ c lemon juice

½ c Sugar (or Splenda if you’re watching your weight)

2 tsp Spirits & Spice Curry with a Kick (or to taste).  To change it up, try with S&S Jolly Good Curry, Curry with a Kick, or A Tale of Two Cities Curry (how is this different?)

 

Preheat oven to 400 degrees. 

Combine all coating ingredients.  Brush Spirits & Spice Lemon Olive Oil over all surfaces of chicken breasts and dredge in coating mixture.  Brush baking dish with S&S Lemon Olive Oil.  Place chicken in baking dish and bake for 15-20 minutes, depending on size of breasts.  If chicken breasts are very large, this could take up to 30 minutes.

Mix together all ingredients for sauce.  Stir well and pour over chicken.  Bake for another 5 minutes. 

After removing chicken from pan, pour remainder of sauce into sauce boat and pour over chicken. 

HINT:  Great served with rice and steamed asparagus.  My husband loves the sauce poured over everything, so I often make more than the recipe calls for.
