Grilled Peachy Tomato Caprese

1 ripe peach (halved and pitted)

1 heirloom tomato (any tomato will do)

4 oz. fresh mozzarella

1-2 Tbsp. Spirits & Spice Aceto Balsamico Vintage

5 leaves fresh basil

½ Tbsp Spirits & Spice EVOO 

Heat grill to medium heat.  Brush the cut sides of the peach with olive oil.  Grill with the cut-side down, over medium heat, for 4 to 5 minutes.  Flip the peach halves and grill until the skins are charred and the peach is soft, another 4 to 5 minutes.

Allow the peach to cool slightly and slice the peach, tomato and mozzarella and layer on a plate.  Drizzle balsamico over the slices, sprinkle ripped or chiffonade basil and enjoy.  Feel free to add a pinch of salt for extra flavor.
