Muddle:
In a shaker, gently muddle the mint leaves with lemon juice and simple syrup to release the mint’s aroma.
Shake:
Add bourbon and peach syrup to the shaker with ice. Shake vigorously for about 15 seconds.
Strain & Serve:
Strain into a rocks glass filled with fresh ice.
Top & Garnish:
Top with a splash of club soda for a refreshing fizz.
Garnish with a couple of thin green apple slices and a fresh mint sprig.
