Beet Red Mule

⅓ cup Spirits & Spice Piedmonte Gin

1 small beet, cooked

2 strawberries

3 Tbsp lime juice

⅓ cup ginger beer

3 Tbsp vanilla simple syrup

2 lime wedges

Spirits & Spice Jolly Good Curry (optional for finishing)

 

In a blender, puree gin, beet and strawberries until smooth.  Stir in lime juice, ginger beer and vanilla syrup.  Serve on ice.  Garnish with lime wedge and curry powder if desired.
