1 ripe peach, pitted, skinned and diced (save a couple of slices for garnish)
2 dashes orange bitters
Soda water for body, optional
Muddle the balsamic and peach in a cocktail shaker. Add bourbon and elderflower liqueur. Top with ice and shake. You can strain the mixture into a glass over ice or simply pour the whole mixture (including the muddled peaches) into a glass. Add soda water if desired and add dashes of bitters for aroma. Garnish with peach slices and enjoy.
