Gluten Free/Dairy Free Peach Cobbler

Preheat your oven to 350 degrees Fahrenheit.  You will need the following: 

1 Casserole dish

4 cups Peaches, peeled and cored and diced – can be fresh or frozen

1 & ⅓ cups Sugar

1 tsp Cornstarch

1 Tbsp Spirits & Spice Calamansi Balsamic

½ cup Soy based margarine (Earth Balance)

1 cup Gluten free flour (I use a mixture of almond, white rice and tapioca flour)

½ tsp Cinnamon

2 Eggs

½ tsp Salt

2 tsp Baking powder

¾ cup Vanilla soy milk


Combine peaches, ⅔ cup of sugar, cornstarch and Spirits & Spice Calamansi Balsamic in a bowl.  Stir and set aside.


Melt margarine in the casserole dish on top of the stove.  Combine remaining ingredients, including remaining ⅔ cup sugar, into a batter.  Pour batter into casserole dish on top of melted margarine.  Pour peaches in evenly into the batter.  Don’t stir.  Bake for 45 to 55 minutes – depending on how deep your casserole dish is.  The deeper it is the longer this will need to bake.  Enjoy!
