1 ½ cups of white rice flour
2/3 cups of sugar
½ cup of ground corn meal
1 Tbsp. baking powder
½ tsp. salt
1¼ cups of vanilla soy milk
2 large eggs
3 Tbsp. melted dairy free margarine (Earth Balance is a good choice)
Extra dairy free margarine to prepare pan
Preheat oven to 350 degrees Fahrenheit. Prepare an 8-inch round or square baking pan by smearing the bottom, sides and corners of the inside of the pan with the dairy free margarine. In a large mixing bowl, combine the dry ingredients. Then add the wet ingredients and combine well, scraping the bottom of the bowl to fully combine both wet and dry ingredients. Bake for 25 to 30 minutes until the top is lightly browned and a knife comes out clean when stabbed in the middle.
