These Chai Spice Gingerbread Cookies are a delightful and festive treat for the holidays, featuring the warm and comforting flavors of chai spice.

Ingredients:

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons Chai Spice & Everything Nice blend
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1/4 cup molasses
  • 1 teaspoon vanilla extract
  • Additional granulated sugar for rolling the cookie dough

Instructions:

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, salt, and Chai Spice & Everything Nice blend.
  3. In a separate large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the egg, molasses, and vanilla extract until well combined.
  5. Gradually stir the dry ingredients into the wet mixture until fully incorporated.
  6. Chill the cookie dough in the refrigerator for at least 1 hour.
  7. Once chilled, scoop the dough and roll it into 1-inch balls. Roll each ball in the additional granulated sugar to coat.
  8. Place the cookie balls onto the prepared baking sheets, spacing them about 2 inches apart.
  9. Bake for 8 to 10 minutes, or until the edges are set and the tops are cracked.
  10. Allow the cookies to cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
