Ingredients:

  • 2 large sweet potatoes, peeled and cut into cubes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/4 cup Spirits & Spice Old Fashion Bourbon
  • 2 tablespoons maple syrup
  • 1 tablespoon brown sugar
  • 1/2 teaspoon ground cinnamon
  • Chopped pecans for garnish (optional)

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the sweet potato cubes with olive oil, salt, and pepper until evenly coated.
  3. Spread the sweet potatoes in a single layer on a baking sheet and roast in the oven for 25-30 minutes, or until they are tender and starting to brown.
  4. While the sweet potatoes are roasting, prepare the bourbon glaze. In a small saucepan, combine the Old Fashion Bourbon, maple syrup, brown sugar, and cinnamon. Bring the mixture to a simmer and cook for 5-7 minutes, stirring occasionally, until the glaze thickens.
  5. Once the sweet potatoes are done roasting, remove them from the oven and drizzle the bourbon glaze over the top. Use a spatula to gently toss the sweet potatoes until they are coated in the glaze.
  6. Return the baking sheet to the oven and roast for an additional 5-10 minutes, or until the glaze is caramelized and bubbly.
  7. Remove from the oven and let the sweet potatoes cool slightly before serving. Garnish with chopped pecans if desired.
  8. Enjoy your delicious Bourbon-Glazed Roasted Sweet Potatoes
