Move over, regular spuds; there's a new 'tater-tot' in town, and it's bringing the bourbon party to the table. Enjoy an autumn culinary creation, Bourbon-Glazed Roasted Sweet Potatoes!
Ingredients:
- 2 large sweet potatoes, peeled and cut into cubes
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1/4 cup Spirits & Spice Old Fashion Bourbon
- 2 tablespoons maple syrup
- 1 tablespoon brown sugar
- 1/2 teaspoon ground cinnamon
- Chopped pecans for garnish (optional)
Instructions:
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the sweet potato cubes with olive oil, salt, and pepper until evenly coated.
- Spread the sweet potatoes in a single layer on a baking sheet and roast in the oven for 25-30 minutes, or until they are tender and starting to brown.
- While the sweet potatoes are roasting, prepare the bourbon glaze. In a small saucepan, combine the Old Fashion Bourbon, maple syrup, brown sugar, and cinnamon. Bring the mixture to a simmer and cook for 5-7 minutes, stirring occasionally, until the glaze thickens.
- Once the sweet potatoes are done roasting, remove them from the oven and drizzle the bourbon glaze over the top. Use a spatula to gently toss the sweet potatoes until they are coated in the glaze.
- Return the baking sheet to the oven and roast for an additional 5-10 minutes, or until the glaze is caramelized and bubbly.
- Remove from the oven and let the sweet potatoes cool slightly before serving. Garnish with chopped pecans if desired.
