
Here's a Vodka-Kissed Tomato-Spices Italian recipe with chicken made by our Las Vegas Store Manager, Bryan Fritz.
Ingredients:
- 1-3 Tbsp of Spirits and Spice Roasted garlic extra virgin olive oil.
- 3-5 boneless chicken breasts chopped into cubes.
- 2 Tbsp of salt.
- 1 ½ Tbsp of fresh ground black pepper.
- 1 tbsp of dried oregano.
- 2-4 Tbsp of Spirits and Spice vodka kissed tomato spice .
- 3-5 Tbsp of true butter. (no substitutes unless you prefer no salted butter)
- Kerrygold garlic and herb butter for more depth.
- 1-2 cups of cherry tomatoes halved.
- 2-4 cups of baby spinach.
- 1/2- 2/4 cup of heavy cream.
- ¼ to 2/3 cups fresh parmesan and lemon wedges for serving upon the plating arrangements.
Instructions:
- In a medium to large skillet, season the chicken with salt, pepper, and oregano. Cook until golden or charred, then add the vodka-kissed tomato spice while cooking. Continue until desired, then remove from the pan.
- Then stir in the garlic in the same pan and make sure that the garlic is fragrant.
- Add the cherry tomatoes and add a bit more salt and pepper to the tomatoes. Once they start to wilt or burst with juice, add the baby spinach.
- Once the baby spinach starts to wilt a bit, lower the heat and bring to a simmer.
- Add the heavy cream and a little bit of the parmesan. Stir every so often until the mixture is combined and reduced a bit, then reintroduce the chicken into the sauce until the final temperature of the chicken reads at least 165 degrees internal temperature.
- Add it to any pasta, risotto or even a huge baked potato for an amazing Italian evening!
