Caramelized Onion Balsamic Glazed Chicken

Ingredients (Feeds up to 4 people):

 

Method:

  1. In a mixing bowl, add chicken, olive oil, garlic powder, onion powder, lemon juice, paprika, salt, pepper, 2 T caramelized onion balsamic vinegar. Coat chicken completely with spices, oils, vinegar. Cover and reserve.
  2. In large sauté pan, add 1-2 T EVOO over medium heat. Add onion, stir, cover. Stir every 30 seconds - 1 minute. When onions start to get soft, after about 2-3 minutes, add minced garlic, cover, stir intermittently. Develop golden brown color on onions and garlic, then remove from pan, and reserve.
  3. Using same pan, heat pan over medium-high or high heat, and add chicken, without additional liquids. Chicken should sizzle when placed in pan. Cover pan and allow to sit 5-7 minutes over medium to medium-high heat. Flip over and repeat on second side. Chicken should have nice medium sear on each side.
  4. Add additional liquid from mixing bowl, add cooked onions and garlic, add 1-2 more T of Spirits and Spice caramelized onion balsamic vinegar. Cover and cook over low heat another 4-6 minutes until chicken is cooked through. Turn off stove and allow to sit in residual heat for 3-4 minutes with lid on or off to reduce cooking liquid.
  5. Plate chicken, and pour cooking juices over the top. Eat and enjoy!
