- In a mixing bowl, add chicken, olive oil, garlic powder, onion powder, lemon juice, paprika, salt, pepper, 2 T caramelized onion balsamic vinegar. Coat chicken completely with spices, oils, vinegar. Cover and reserve.
- In large sauté pan, add 1-2 T EVOO over medium heat. Add onion, stir, cover. Stir every 30 seconds - 1 minute. When onions start to get soft, after about 2-3 minutes, add minced garlic, cover, stir intermittently. Develop golden brown color on onions and garlic, then remove from pan, and reserve.
- Using same pan, heat pan over medium-high or high heat, and add chicken, without additional liquids. Chicken should sizzle when placed in pan. Cover pan and allow to sit 5-7 minutes over medium to medium-high heat. Flip over and repeat on second side. Chicken should have nice medium sear on each side.
- Add additional liquid from mixing bowl, add cooked onions and garlic, add 1-2 more T of Spirits and Spice caramelized onion balsamic vinegar. Cover and cook over low heat another 4-6 minutes until chicken is cooked through. Turn off stove and allow to sit in residual heat for 3-4 minutes with lid on or off to reduce cooking liquid.
- Plate chicken, and pour cooking juices over the top. Eat and enjoy!
