Spirits & Spice Blackened Chicken

This is easy peasy, lemon squeezy!

You will need:
Skinless chicken thighs or breasts
2 Tbsp. S&S Chili Oil
1 Tbsp. S&S Ragin' Cajun Spice
Salt to taste

In a skillet (iron skillet is preferred), heat the Chili Oil over medium-high heat. Once the chili oil is warm, place the chicken pieces in the skillet so they are laying flat. Sprinkle 1/2 of the Blackened Cajun Spice over the top of the pieces of chicken. Cover and cook for 7 minutes. Check the bottom of the chicken pieces for some brownness, turn over with tongs and sprinkle the remaining part of the Blackened Chicken Spice over the side of the chicken that is now facing up. Cook another 6 minutes. Check the bottom of the chicken it should be browned throughly. Turn the chicken over again with tongs and allow to cook for 2 more minutes. Remove from the pan. Salt to taste and serve.
